"What's a chocolate lover to do? Obviously, cocoa beans do not grow around these parts. But at least you can buy chocolate that's manufactured locally when the urge strikes. "Our goal has always been to make the best-tasting chocolate. Health just happens to be a consequence," says Timothy Moley, owner of Boulder, Colo.-based Chocolove.
Chocolove's Chocolatour line of premium chocolate bars features single-origin cocoa beans from São Tome, the Dominican Republic and Tanzania. In addition to listing the percentage of cocoa, the bars include a vintage to "accentuate the annual changes in flavor."
"Chocolate is a food for enjoyment ... to me it seems inappropriate to turn chocolate into a drug, and the more you put symbols and claims on it, the more it becomes that," he says.

No Golden Ticket, but More than Candy

When Timothy Moley was thinking of starting a candy brand in the mid-1990s, he gathered the most serious chocolate lovers he could find, who all turned out to be women, and asked what chocolate meant to them. “They said eating chocolate is a personal romantic experience,” Mr. Moley said by phone from the offices of Chocolove in Boulder, Colo.
He showed the group some potential label images and the one they liked best looked like a love letter from a foreign country, complete with a postmark and a gold seal. He ran with that concept, and now the bar, made of Belgian chocolate, comes with a romantic poem printed inside the label.
Love, starts one by Charles Swain, “is to build with human thoughts a shrine where hope sits brooding.”
